How to make Chemex coffee

You will need:
- 30g fresh medium-grind Pact coffee
- Filtered water (or bottled water)
- Chemex (ours has 500ml capacity)
- Drip scale (or a measuring jug and V60 scoop if you don’t have them)
- Chemex filter paper
- Kettle

You will need:
- 30g fresh medium-grind Pact coffee
- Filtered water (or bottled water)

- Chemex filter paper

Step 1
Fold the filter paper into four and place it so the side of the three folded squares faces the pouring spout.
Step 2
Boil and kettle and leave this to sit for 30 seconds.
Step 3
Soak the filter paper wet with warm water and discard this water.
Step 4
Measure 30g of medium-grind coffee and put this in the filter paper.
Step 5
Using a spoon, make a little well in your ground coffee. This makes sure the water hits the coffee evenly.
Step 6
Take your kettle and evenly pour 60ml (60g) of water over your coffee.
Step 7
Leave the coffee for 45 seconds and watch as it ‘blooms’.
Step 8
Pour another 240ml (240g) of water onto your coffee. Wait 30 seconds while the coffee falls down into the Chemex.
Step 9
Pour another 200ml (200g) of water onto your coffee. As you pour, try to make overlapping circles with the water to hit the coffee evenly.
Step 10
Holding your Chemex carefully, use your hands and swirl the coffee with the water, making sure any coffee on the sides falls into the brew.
Step 11
Wait 3-4 minutes for the coffee to draw down into your Chemex.
Step 12
Pour your coffee from the Chemex into your mug and enjoy.
